An efficient cooling of the dough during the fast kneading process is an essential pre-requisite in the production of high quality bakery products. The delta range of cooling equipment is the ideal solution to this problem.

The high kneading speed of modern dough kneaders leads to an increase in temperature of the dough. This provokes a fermentation undesired at this stage in production. This is best prevented by the use of cooled water at a temperature of between +2 °C and +3 °C.
