Who are Total Baking Industries

Total Baking Industries is the culmination of two iconic New Zealand food businesses. Heavens Bakery in Napier and Nada Bakery in Wellington. Jason and Michael are both second generation bakers and businessmen, that have a passion for the baking and food industry. They both want to help other food manufactures grow and gain consistency in their products. Both Jason and Michael are involved in the Baking Industry Association and strongly believe in giving back to the food sector to ensure it continues to strengthen and meet the modern day demands that go with the food industry. Jason was the President of BIANZ from 2007-2010 and an executive board member until recently. Michael is an executive board member since 2006 and is the immediate past President.

Jason and Michael travel the world researching and following the latest food trends. Trailing machinery that helps to deliver consistent results. Together they run Total Baking and import these machines into New Zealand so other businesses can take advantage of these products and continue to grow their businesses.

We are passionate about helping others succeed in the industry and we encourage bakers to call us for advice. We understand that sometimes businesses need advice as well as equipment. We are proficient at recipe development and often send out new ideas for recipes or systems in our e-newsletters, it is well worth taking the time to sign up and receive ideas for no cost at all.

Total Baking offer consultancy services to assist you in workflow management, product development or logistics advice. Confidentiality is key in what we do as we understand how competitive business can be. We have worked with some of the largest manufacturers through to some of the most niche businesses in New Zealand so understand how to ensure our advice scale-able to your operation. Total Baking’s point of difference is that we have bakeries ourselves and use the equipment that we sell. This ensures that the equipment and advice we offer is based on facts from use and not just that of a sales brochure. We understand good food and market trends. Both Jason and Michael work in partnership and enjoy challenging one another to ensure the best advice is given to our clients. If you choose to work with us for the full project we will also include our advice and consultancy service at no extra charge for the roll out of the project. We also work with our suppliers closely to ensure the machines we are offering are correct in specifications and that the advice we are offering is in line with the design of the machine. 

Because we are bakery owners ourselves Total Baking understands the importance of having quality equipment as this pays for itself in the long term - requiring less repairs and maintenance and more importantly less downtime ensuring your business can maximise its efficiencies.

 Jason Heaven - Total Baking Director, Qualified Baker:

Jason has well over 35 years experience in the baking and food industry, and has a passion for the food industry. He is the single most winner of the New Zealand Bakery of the Year competition and the current holder of this title. He is a past winner of the Supreme Pie Awards and has won the Westpac business awards multiple times
His strengths would be in patisserie and pastry. Jason presently runs his Hawkes Bay based family business which was established over 46 years ago. Heavens Bakery has changed with the times from a cake shop, hot bread shop, large scale manufacturer to a niche modern bakery. They pride themselves in making quality products and have an operation that runs like clockwork. Jason has a wealth of knowledge in large scale manufacturing and small bakery lines.


Michael Gray - Total Baking Director, Qualified Baker:


Michael has over 20 years experience in the food industry and currently runs his family's business Nada Bakery in Wellington which has been running for over 44 years. Multi award winners and Bakery of the Year three times and runner up on numerous occasions and also an award winner in the Artisan awards. 

In 2019 he was awarded a gold medal and a bronze medal in the New Zealand Bakels Supreme Pie competition as well as silver medals in 2018 and 2017. Michael has also been a judge in this competition and understands how to make great pies. 

He is a past President of The New Zealand Baking Association of New Zealand and has been a member of the BIANZ board for the last 13 years. He Is currently Chief Judge and competition manager for t

he BIANZ and is responsible for the running of The Bakery of the Year® competition as well as the National Hot Cross Bun competition. Michael also holds the Slice magazine portfolio for BIANZ.

Running Cafe’s, Bakeries and Deli’s is a demanding job and Michael knows first hand the importance of buying quality machinery that do the miles. “ Its has to be simple to use, deliver consistent results and be reliable.” 

Michael’s family have imported quality machinery into New Zealand for over three decades and have a great understanding of how to deliver quality products that he uses everyday in his bakery.
